HOW TO SMOKE COCKTAILS

WE ARE RELEASING a new video in the Sanz Cocktails Series in which we offer you guidance courtesy of  Luis Inchaurraga about how to make smoked cocktails with several techniques and an amazing recipe with tequila, the kind that will be indelibly etched on your palate .

♦️THE BASICS FOR SMOKING:

Botanicals or spices:

  – Use of a blowtorch with botanicals or spices

  – Examples: cinnamon, fresh rosemary

  – Decorative use by bartenders due to the pleasant aroma

 

♦️Wood:

  – Suitable types with a low resin content

  – Composition: cellulose, hemicellulose and lignin

  – Lignin decomposes at around 300°C

  – Aromas released at around 400°C

  – Types: apple tree (light and fruity), mesquite (intense and aromatic), hickory (sweet, used on barbecues)

 

♦️WAYS TO ADD SMOKY FLAVOUR TO A COCKTAIL:

  Use of products that have already been smoked, for example, smoked sugar syrup Sanz Cocktails: https://amzn.eu/d/awueoER

  Use of a blowtorch to directly burn flavouring elements

Use of a smoker

– Process: placement and lighting of moist wood shavings

– Containing smoke with a bell, disk, or bottle

♦️TECHNIQUE EXAMPLE:

  Preparation of a Negroni using coconut milk syrup Sanz Cocktails and 100% Blue Agave rested Jalisco Tequila: https://amzn.eu/d/b27nD4G

– Smoked in a bottle and served in an old fashioned glass with a block of ice.
